Le soja, encore appelé soya, a pour nom scientifique soja hispida ou glycine max ; ce n'est cependant pas une glycine dont le nom scientifique est wistaria Les racines hébergent dans des sortes de verrues (les nodosités), des bactéries qui utilisent l'azote de l'air et produisent des aliments minéraux azotés dont profite le soja et qui, par la suite, enrichissent le sol. En été, la plante fleurit en produisant des groupes de petites fleurs qui partent de l'aisselle des feuilles. Elles ont la forme typique des papilionacées et une couleur blanche ou violacée. Las fruits sont des gousses très velues qui se développent aussitôt et terminent leur maturation en automne, après la chute des feuilles. Source : |

Il est largement utilisé dans l'alimentation des êtres humains et des animaux. Cependant les fèves de soja contiennent des inhibiteurs de la trypsine qui empêchent l'organisme d'absorber les protéines. Il ne faut donc pas consommer des fèves de soja crues. Le soja doit être considéré comme un « allergène d'origine alimentaire classique ». Il a été pendant longtemps faussement considéré comme un substitut ne présentant aucun danger pour les enfants développant des réactions adverses au lait de vache.
